Description

This avoids the dependency on zookeeper, see https://developer.confluent.io/learn/kraft/.

Additionally, it would be nice to document how to override the settings to use zookeeper instead.

Modify the default configuration for the apache kafka service in services flake to use KRaft mode instead of ZooKeeper. Look at the existing kafka module and change the startup command or configuration to enable KRaft. Also add documentation on how to override the settings to use ZooKeeper if needed.
